시트르산(citric acid) 또는 구연산(枸櫞酸)은 귤속 과일에서 주로 발견되는 약한 유기산이다. 이는 자연적인 보존제이며 음식이나 음료수에 산성 또는 신 맛을 첨가하기 위해 쓴다. 생화학에서는 대사에서 일어나는 시트르산 회로의 중간단계로서 중요하며, 따라서 모든 생명체가 포함하고 있다. 또한 시트르산은 환경 친화적인 청소제로 쓰이며, 커피포트 등에 굳은 석회질을 녹이는데도 쓰인다.
시트르산은 특정 과일과 야채에 많이 들어있는데, 귤속 과일에 특히 많이 들어 있어 이 이름이 정해졌다. 레몬과 라임은 특히 이 산을 많이 가지고 있으며 말린 무게의 8%에 해당하며, 과즙에는 47 g/L이 들어있다.[1] 시트르산의 농축은 오렌지의 경우 0.005 mol/L에서 레몬과 라임에 0.30 mol/L가 들어있으나 기르는 곳의 토양이나 환경에 따라 차이가 있다.
