프럭토스(Fructose) 또는 과당(果糖)은 글루코스와 갈락토스와 함께 혈액을 이루는 가장 중요한 3대 당 중의 하나이다. 분자식은 C6H12O6이며, 벌꿀, 과일이나 고구마, 양파 등의 뿌리 채소에서 발견된다. 프럭토스는 글루코스와 프럭토스로 구성된 이당류인 수크로스를 분해해 소화 과정에서 얻을 수도 있다. 프럭토스는 수크로스보다 두 배 정도의 당도를 지니며, 천연적으로 생성되는 당 중 가장 단 당분이다.
