설명 : 카제인의 나트륨염. 15~16%의 산 카제인에 주로 수산화나트륨을 첨가하고 50~60℃에서 가온 용해, 분무 건조하여 얻어지는 백색 분말. pH는 보통 6.6~7.0으로, 무취이지만 보존 중에 특유의 풍미를 내는 경우가 있다. 물에 가용이지만 습윤성이나 분산성이 떨어지기 때문에 보통 70℃ 이상의 온탕에 녹인다. 유화력이 풍부하기 때문에 햄,소시지의 점착, 제과·제빵, 커피화이트나, 냉동 dessert 등에 사용한다.
